Slow Cooking Without a Recipe

Once you understand the shape of a braise, you can build one from whatever the market gave you. A framework for improvising the low, slow pot.

Most braises follow the same arc, and once you can see it you stop needing a recipe. Something is browned, something aromatic is softened, liquid goes in, and time does the rest. The particulars -- which meat or bean, which spices, which vegetables -- are yours to choose based on the season and the shelf. Learn the arc and the whole category opens up.

Begin by building flavor at the bottom of the pot. Brown your main ingredient in oil until it takes real color, then set it aside and soften onions, garlic, and whatever aromatics you like in the same fat, scraping up the browned bits. This base is the difference between a braise that tastes deep and one that tastes thin. Do not rush it.

Then add just enough liquid to come partway up your ingredients -- stock, wine, tinned tomatoes, water -- return the main event to the pot, and let it cook low and covered until everything is meltingly tender. Taste near the end and correct with salt and acid; a squeeze of lemon or a splash of vinegar wakes the whole thing up. Serve it with something to soak up the sauce and you have made dinner without ever opening a book.
